Bulgar & Veggie Dish

I threw together this Bulgar & Veggie dish today for lunch. It’s quit tasty so I thought I’d post it here to save and share.

  • 1 cup – Organic, Quick Bulgar, prepared as directed on package.
  • 2 scrambled eggs
  • 1 cup organic asparagus
  • 1/2 chopped onion
  • 1/4 tsp of Cumin
  • 1/4 tsp of Turmeric
  • 1 cup of greens such as kelp or spinach.

Prepare the Bulgar as directed on package.  Put in a bowl and set aside.  Scramble eggs and add to the bulgar bowl.  Fry Asparagus and onion until tender.  Add spices then put everything in the bulgar bowl.  Lastly, fry the greens in grapeseed oil until wilted then mix everything together.  YUM!
