My daughter told me she wanted gingerbread cookies. I thought…uggh. I’m not a ginger fan. So I started looking at different recipes and researching comments others made on famous recipes. I came up with a somewhat unique recipe. These cookies turned out delicious and I’m not even a gingerbread fan.
Gingerbread Cookie Recipe with Cinnamon Essential Oil
Ingredients:
- 2 1/4 c flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/2 tsp ground cloves
- 3/4 c softened butter
- 5 tbsp brown sugar
- 1 c white sugar
- 1 egg
- 1/4 c maple syrup
- 1 tbsp water or orange juice
- 1 drop cinnamon essential oil (optional for extra cinnamon punch)
- 2 tbsp white sugar (optional topping)
Directions: Preheat oven to 350. Cream butter and 1 c sugar until fluffy. Beat in egg. Stir in maple syrup and water. Gradually stir in remaining ingredients. Freeze dough for 30 minutes. This makes them crispy on the outside and soft in the middle. Shape dough into walnut sized balls and roll them in the remaining 2 tbsp sugar. Place cookies 2 inches apart onto ungreased cookie sheet. Flatten slightly. Bake 8-10 minutes. Cool for 5 minutes.
