Humpty Dumpty Cookie Recipe – A Holiday Favorite

This is a favorite recipe for my family during the holidays.  My grandma made these every Thanksgiving and Christmas.  I’ve seen a few variations of this recipe so you may call it something else.  My family calls them Humpty Dumpties.  🙂  This is one of those recipes I’ve kept up with and will pass down to my kids.

Humpty Dumpty Cookie Recipe

Ingredients:
1 cup Sugar
1 cup Karo Syrup
12 oz Peanut Butter
4 c. Corn Flakes or Special K cereal
Directions:
Cook sugar and syrup to a rolling boil or to 110 degrees on a candy thermometer.   Take off heat and stir in peanut butter until smooth.  Stir in cereal.  Place spoonfuls onto wax paper until set.  Store in air tight container.

We love these! My mother in law first introduce me to these about 24 years ago, she made them when her children were growing up. Her mother got the recipe from a corn flakes box many years ago!! I love BOB recipes. I have changed these up at times using brown sugar, dark Karo or chunky peanut butter, even added mini chocolate chips when stirring in cereal. Great memories and tasty treat!!

Wow. That's interesting. Thanks for sharing. They are yummy. I've tried chucky pb. I'll have to try the brown sugar. :)
