Southwest Chicken & Rice Skillet
Ingredients:
- 1 tbsp olive oil
- 1 large chicken breast
- 1/2 chopped onion
- 2 tbsp taco seasoning
- 2 c chicken broth
- 1 can black beans
- 1 c frozen corn
- 1 c salsa
- 1 c rice
- Optional Toppings: cheese, sour cream, lettuce
Directions: Cut chicken into small pieces. Pour olive oil into skillet and heat. Saute chicken, onion and taco seasoning. Add remaining ingredients and bring to a boil. Turn heat to medium-low and simmer for 15 minutes. Let sit for 5 minutes before serving. Serve in hard or soft shells with optional toppings or use as a dip for nachos.
