I love zucchini banana bread but I don’t love all the sugar in most recipes. So, I’ve been experimenting with a healthier version. My family really liked this recipe so I’m saving it here for future use and to share with all of you.
- 1 tsp vanilla
- 1/2 c yogurt (Greek or homemade)
- 1/3 c coconut oil
- 1 egg
- 2 tbsp honey
- 1 ripe mashed banana
- 1/2 c brown sugar
- 1 drop cinnamon essential oil or 1 tsp ground cinnamon
- 1/2 c ground oats
- 1 c all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 c shredded zucchini
- 1/2 c nuts (optional)
- 1/2 c dark chocolate chips (optional)
Directions: Mix all wet ingredients. Blend quick oats in a food processor until fine. Slowly add dry ingredients while mixing. Fold in nuts and chocolate (optional). Bake at 325 degrees until brown. Approx 45 minutes. Enjoy your zucchini banana bread!
